I have to say that after living on the border for almost 30 years most of my go to meals are Mexican. Excamples would be Chicken and Rice, Tacos, Guacamole, Pico de Gallo, but I know you don't even need a recipe for those.
Many years ago, when I was still teaching, I bought a Lipton Noodle package mix and this recipe was on the back. I have altered it, and have used it for just two people or a company dinner by adding more chicken breasts.
Skillet Chicken Rollups
2 whole chicken breasts, split, skinned, boned and pounded
4 sliced of thin ham
4 slices of provolone cheese or cheese of your choice
1/4 cup canola oil
1 1/2 cups of water or 1 can of chicken broth
1 pouch of Lipton noodles and sauce, parmesan or flavor of your choice
(you could also use a rice kit or anything you have in the pantry

1.After you have pounded each chicken breast top with the slice of ham, and the slice of cheese and roll up and secure with a toothpick.
2. Salt and pepper chicken breasts or added chicken seasoning of choice.
3. In skillet add canola oil and brown chicken rollups.
4. Add water or chicken broth and cover and simmer for 20 minutes or until chicken is tender.
5. Remove chicken and keep warm and mix or add the noodle kit or rice kit of your choice to the broth or water in your skillet.
Actually here, I usually put the rice or noodle kit right in with the chicken breasts and finish cooking the chicken with the noodles or rice. This recipe will serve four and remember that if you are feeding a crowd, just increase the number of chicken breasts and rice or noodles.

I collect moose or elk anything...started this several years ago. I just think they are one of God's most beautiful creations. I am awed by the fact that they can carry that huge rack of antlers with them wherever they go!

My favorite "go-to" meal is Chalupas!! All you need is some beans, cheese, and chalupa shells!!
Heat your refried beans on the stove for a few minutes, then slather them on the chalupa shells. Next add some grated cheese on top of the beans and pop them in the oven (heated to around 375 degrees) for a few minutes (or until the cheese is melted!). Once you pull them out of the oven you can add more toppings like lettuce, tomoates, hot sauce or eat them as is!! They are super quick, super cheap and super yummy!!

What a concept! Being in another "phase" of meal cooking... I enjoy going out... however, I do know that Pop enjoys a home cooked meal. I do enjoy cooking, too, now that I am more flexible!! Plus, it is healthier eating at home! But some days.....!

I love this question and reading the other responses! I am NOT a morning person, and we are always running like crazy in the morning as well! The only thing that we have done differently lately is to let our first kid awake (usually the oldest) climb into bed with us for a few minutes in the morning. My husband and I used to be so against having our kids in the bed at all. However, now it is just a few sweet minutes of snuggles that gets our day going on a better note than, "go! go! go! Hurry up, get dressed, eat your breakfast, and shooo out the door!" Then, after he is off to school, I turn on a t.v.show for my girls so that I can have some time to read my Bible and get a shower. Call it selfish, but I have to have some time alone in order to get anything going the rest of the day. Often in the mornings, our house is a mess, and the dishes and beds are still a undone. I try to tackle that at naptime. :)

Wow! I love this post! I love the LOVE month of February. It does take effort, but if you just remember that life is way too short to waste on holding grudges, being upset, etc., you will see that loving unconditionally is not that hard. I am blessed with 2 beautiful girls who have 2 beautiful families and they make loving unconditionally easy!
